Caribbean "Chow" Fried Rice

2 cups rice
2 small carrots
1 medium sweet pepper
1 cup pineapple chunks (optional)
1 medium onion
2 pimento peppers
Hot pepper (optional)
1 tablespoon grated ginger
About 6-8 large bandania leaves
3 grains garlic
2 tablespoons oil
Salt and black pepper to taste
Soy sauce

Boil rice with salt and set aside.
Cut carrots, and sweet peppers in cubes.
Blend bandania and garlic finely.
Finely dice hot peppers, pimentos and onion.
Heat oil in pot and add the finely diced peppers, onion and ginger. After about 1 minute, add carrots and sweet peppers and cook for about 2 minutes.
At this point you may add the pineapples.
Now add the cooked rice together with black pepper and soy sauce until your desired colour.
Lastly, add the bandania mixture, mix thoroughly and remove from heat immediately.
And that is how I "Trini dong" my fried rice.
